Here is some yummy yummy food prep for you all! We did some burrito bowls this week.
I made my own Pico de Gallo which is a super simple delicious salsa. Dice red onion, tomato, jalapeno, cilantro, squirt the juice of three lines and a pinch of salt… presto! Best most fresh salsa ever.
I also made some black beans flavored with garlic powder and cumin, Lime Cilantro Rice and Lime Cilantro Mojito Chicken Breasts (I used Dinosaur Mojito Chicken sauce and reduced it once chicken was done to intensify the flavor as a drizzle for our bowls!). I also baked off some chicken for the boys and prepped all my yummy veggies and fruits.
